I love to cook and I love to watch people cook. Barefoot Contessa, Ina Garten, really is my most favorite person on television to watch cook. I know it is a good sign when my 4 year-old asks me, “Can I watch more Ina, momma?” Seriously? It isn’t that we watch a lot of television, but when I do turn on the tv during the day, and it is for me, we go straight for the DVR’d episodes of Barefoot Contessa.

Blueberry Apple Crisp
I was looking around today for some healthy snack options and stumbled upon this recipe on the Moms Who Think Website. It sounds delish and I can’t wait to give it a try!
Blueberry Apple Crisp is a scrumptious way to get whole grains and fruit. Preheat your oven to 400 degrees. Blend the following ingredients: ½ C brown sugar, 2 tsp lemon juice, ¼ C water, and ½ tsp cinnamon. Core, slice, and peel three apples. Blend apple slices with 1 C frozen blueberries, and then blend with sugar/lemon juice mix. Place filling in greased 9” baking dish.
Create the topping by mixing another ½ C brown sugar, ¾ C flour, ¼ tsp salt, and 1/3 C old-fashioned rolled oats together. Blend with ¼ C butter until crumbly. Spread topping evenly over filling and bake for 30-40 minutes. Cool for about a half hour before serving.

Mayan Steak Skillet
Tonight for dinner I made this recipe out of my cookbook LATIN FLAVOR (a Pampered Chef cook book). Pg 30 – Mayan Steak Skillet, served with long-grain rice. It had a nice kick to it, which my husband really enjoyed. If you’d like the recipe, email and let me know!
TIP -When cooking rice, I use chicken broth instead of water, as the recipe will typically call for. Makes great extra flavor to the rice and I just omit the salt requested in the rice directions as the broth has plenty of sodium and great flavor.

Tonight we had friends come over for our first driveway party. I was to serve and prepare an appetizer. Every family coming also was bringing a cooler, and an appetizer to share too. I love making new recipes when we entertain, but I’m also working really hard on watching our budget regarding extra MISC. expenses. So, I chose to make an amazing Artichoke Dip served with chunks of toasted italian loaf bread. I had all the ingredients on hand for this except for the bread. So after one simple trip to Kroger, I got my fresh bread from the bakery for $1. Then, I made chocolate covered pretzels from my pantry stash of extra pretzels and chocolate chips. Lastly, by my husband’s request, I cut up and served some smoked summer sausage. Serving three appetizers and spending $1 is quite pleasing to my bank account. Wouldn’t you agree?
